語源 「カブリ」は「カービリー」の誤記である可能性があり、「カービリー」はペルシア語のقابل に由来する。この名称はペルシア語圏において複雑なピラフ料理に早い段階で付与されたとみられ、最初に文献に現れるカービリー・ピラフのレシピは、サファヴィー朝 期にアリー・バーワルチーが1521年に著した『料理書』（Kār-nāma ）に記録されている。この書は現存する最古のペルシア語料理書である。
