Muối (文字通り「塩漬け」を意味する)とchua (文字通り「酸っぱい」または「発酵させる」を意味する)は、ベトナム語で保存食を指す言葉である。多雨のモンスーン熱帯気候は、ベトナム人に一年中豊富な野菜の供給をもたらす。ベトナムの歴史において畜産 が大規模に行われたことはなく、そのため保存食は主に植物ベースの漬物料理である。魚介類はしばしば魚醤 のようにmắm と呼ばれる発酵食品に加工される。
