自動酸化と腐敗 不飽和脂肪酸とそのエステルは、C-H結合がC-O結合に置き換わる自動酸化 を受ける。このプロセスは酸素（空気）を必要とし、触媒となる微量の金属の存在によって促進される。二重不飽和脂肪酸は特にこの反応を起こしやすい。 植物油にはトコフェロール などの抗酸化物質が含まれているため、この反応に多少なりとも抵抗する。油脂はしばしばクエン酸 などのキレート剤 で処理され、金属触媒を除去する。
