Rogan josh consists of pieces of [[Lamb and mutton|lamb or mutton]] [[braised]] with a gravy flavoured with [[garlic]], [[ginger]] and aromatic spices ([[cloves|clove]], [[bay leaf|bay leaves]], [[cardamom]], and [[cinnamon]]), and in some versions incorporating onions or yoghurt.
