歴史 ショウガに関する最初の文献記録は、中国の戦国時代 （紀元前475年-紀元前221年）に孔子の弟子たち によって書かれた『論語 』に見られる。そこには、孔子 が毎食ショウガを食べていたと記されている。406年には、僧侶の法顕 が、ショウガが鉢植えで栽培され、壊血病 を防ぐために中国の船に積まれて運ばれたと記している。宋王朝 （960年-1279年）の時代には、ショウガは南方諸国から中国に輸入されていた。
