The mainstream culinary traditions in all three regions of [[Vietnam]] share some fundamental features:&lt;br /&gt;

* Variety and harmony of textures: Crisp with soft, watery with crunchy, delicate with rough.&lt;br /&gt;
* Broths or soup-based dishes are common in all three regions.&lt;br /&gt;
