Unsaturated fatty acids and their esters undergo [[auto-oxidation]], which involves replacement of a C-H bond with C-O bond. The process requires oxygen (air) and is accelerated by the presence of traces of metals, which serve as catalysts. Doubly unsaturated fatty acids are particularly prone to this reaction.  Vegetable oils resist this process to a small degree because they contain antioxidants, such as [[tocopherol]]. Fats and oils often are treated with [[chelation|chelating agents]] such as [[citric acid]] to remove the metal catalysts.&lt;/div&gt;</summary>
