== Etymology ==&lt;br /&gt;
The word &amp;#039;&amp;#039;&amp;#039;&amp;#039;&amp;#039;Bhurta&amp;#039;&amp;#039;&amp;#039;&amp;#039;&amp;#039; is derived from the [[Sanskrit]] roots &amp;#039;&amp;#039;&amp;#039;&amp;#039;&amp;#039;bhṛj&amp;#039;&amp;#039;&amp;#039;&amp;#039;&amp;#039; (भृज्) and &amp;#039;&amp;#039;&amp;#039;&amp;#039;&amp;#039;bhṛkta&amp;#039;&amp;#039;&amp;#039;&amp;#039;&amp;#039; (भृक्त) which mean something which is roasted or fried.  Thus &amp;#039;&amp;#039;bhurta&amp;#039;&amp;#039; refers to a spicy mash made from roasted, boiled or fried vegetables.&lt;br /&gt;
